Cooking and Denaturation Phase

Step 1

Place the dry, unsoaked chickpeas directly into the pressure cooker. Add the baking soda and cover with one liter of water. Seal and bring to full pressure at 15 PSI (250°F). Maintain this pressure for exactly 55 minutes. The highly alkaline environment dissolves the pectin in the cell walls at lightning speed, while the pressure forces water deep into the starch to gelatinize it without any prior soaking.

Step 2

During the last 15 minutes of cooking, prepare the enzymatic inhibition of the garlic: squeeze the lemon juice into a small ramekin. Finely mince the (germ-free) garlic cloves and submerge them immediately in the lemon juice. Let sit for 15 minutes. The pH below 3.6 of the lemon juice will denature the alliinase, guaranteeing a pure and complex garlic aroma without the slightest burn on the palate.

Just before serving

Step 1

Manually depressurize the pressure cooker. Drain the chickpeas, reserving 60 ml (2 fl oz) of the cooking water (aquafaba). Immediately transfer the blazing hot chickpeas into the blender jug. Add the garlic-lemon mixture, salt, cumin, and tahini. Hot blending allows for maximum friction and releases residual starches.

Step 2

Turn the blender on full power. Immediately drop the ice cubes through the top opening to induce a massive thermal shock. The sudden drop in temperature freezes the oil/water emulsion network (tahini fats and vegetation water), preventing oil exsudation. Blend for 3 minutes until a pearlescent cloud texture is achieved.

Step 3

Spread the preparation at the bottom of a shallow bowl with an offset spatula, drawing a perfect furrow. Coat this furrow with extremely high-quality extra virgin olive oil and sprinkle with previously toasted white sesame seeds. Enjoy with warm sourdough focaccia.

Chef's Tip

The absolute scientific trick to using raw garlic without its aggressive bite: acidulation. By immersing crushed garlic in lemon juice (acidic pH), you irreversibly denature the alliinase. This enzyme can then no longer convert alliin into allicin (the molecule responsible for garlic's sulfurous and burning heat).

Wine Pairing

The absence of confit notes and the brightness brought by the lemon demand a white wine of great mineral vivacity. An Assyrtiko from Santorini or a young Sancerre (Sauvignon Blanc) will echo the tension of this modernist hummus.
