Easily identifiable by the golden crescent between its eyes, the gilt-head bream possesses dense, juicy, and very white flesh. It tolerates baking whole exceptionally well (encased in a coarse salt crust). This mineral shell hermetically traps the steam and moisture released by the fish, acting as a natural steam oven.
