An Andean pseudo-cereal of extraordinary protein richness (containing all essential amino acids). The raw seed is protected by a layer of saponins, foaming and highly bitter molecules. Friction washing under running water is indispensable before cooking. Heated in water, the starch gelatinizes and the tiny spiral germ detaches from the seed. Properly prepared, quinoa keeps a crunchy pearl in the center, bringing bounce and vegetal hazelnut notes to cold salads or hot dishes.
