Edible Pansy
A visual marvel of haute gastronomy, the edible pansy contains powerful anthocyanins (the pigments responsible for its purple, yellow, or blue colors). Its flavor is very delicate, evoking light notes of sweet mint (methyl salicylate) and undergrowth. Sensitive to pH, it loses its brilliance if in prolonged contact with an acidic vinaigrette. It is placed with plating tweezers at the last second, acting as a colorimetric and floral vanishing point on the plate.
