Panko Breadcrumbs

A marvel of Japanese food engineering. True panko is made from crustless bread baked via electric current (ohmic heating), then ground into large, jagged flakes. This highly aerated, honeycomb structure offers massive surface area while absorbing much less oil than classic fine breadcrumbs. The result, when fried, is an extraordinarily light, airy, and sharp crunch (Japanese tonkatsu) that retains its acoustic and textural integrity much longer.
