Lucques Green Olives
Recognizable by its crescent moon shape, this Languedoc olive is the green jewel of chefs. Picked before maturity, its extreme bitterness (oleuropein) is neutralized by a very precise alkaline bath. Its lack of heavy fermentation allows it to retain a firm, crisp, vibrant flesh, releasing buttery notes of fresh almond and avocado. It is used raw, finely chopped on white fish carpaccios so as not to alter its elegance with heat.
