Oysters n°3

The No. 3 caliber offers a perfect balance between crisp flesh and seawater. The oyster is a living organism rich in zinc and free amino acids. Mostly served raw (alive), the application of any heat must be surgical. "Poached" for a few seconds in its own filtered juice, it barely firms up (partial surface coagulation), swells slightly, and loses its slimy appearance, offering an exceptional warm, iodized chew to top a velouté or a beef tartare.
