Raspberry
A complex architecture consisting of multiple drupelets filled with explosive, tart juice, the raspberry is driven by "raspberry ketone," a powerful aromatic molecule. Any thermal manipulation destroys its alveolar framework. To obtain pure raspberry powder, molecular gastronomy uses liquid nitrogen or deep freezing (-40°C) to freeze and shatter the drupelets without crushing them, separating the seeds from the juice with surgical precision, allowing the creation of inserts and decorations of pure acidity.
