The ultimate all-purpose flour. T55 indicates the ash content (minerals remaining after incineration), revealing a moderately refined grain. Biochemically, it offers a perfect balance: enough protein (around 10-11%) to develop a gluten network sufficient for the structural integrity of a tart dough or cake, but not enough to make the preparation rubbery. It is the universal stabilizing ingredient, ideal for roux (binding via starch gelatinization) and choux pastry.
