Stuffed and dried, this Iberian sausage is saturated with Pimentón (smoked paprika). Mild chorizo is not spicy, but releases a glowing red oil bursting with earthy and smoky flavors as soon as it is subjected to heat. Diced into brunoise and rendered over very low heat, it acts as a liquid spice: its "chorizo oil" will masterfully tint and flavor the neutral flesh of a white fish (cod), poultry, or risotto water, providing a striking chromatic and gustatory bridge.
