Greek Yogurt

Strained of its whey, Greek yogurt presents an ultra-dense network of proteins (caseins) and a protective fat content (around 10%). This dual property gives it an incredible tolerance to heat: it can be incorporated into hot, spicy sauces (curries, Middle Eastern stews) without splitting (curdling), unlike classic yogurt. Cold, its creamy texture and sharp acidity perfectly balance spicy barbecued meats (tzatziki).
