Sherry Vinegar
A masterpiece of oxidation and aging. Aged in oak barrels using the dynamic "solera" system, Sherry vinegar undergoes slow thermodynamic concentration. Its acetic acid mellows while it enriches itself with aromas of roasted nuts, caramel, and dry wood (complex acetals). In gastronomy, a few drops are enough to elevate an Andalusian Gazpacho (osmosis with raw vegetables) or to provide the "final touch of acidity" (kick) that balances the reduction of a powerful veal stock.
