Chestnut Honey

A dark, liquid honey endowed with a very pronounced woody and tannic bitterness. Unlike light, floral honeys, chestnut honey possesses an aromatic framework that survives heat marvelously well. It is the pillar of roasted meat marinades (pork, duck) because its bitterness perfectly balances the animal fat. In pastry, it cuts through the "too sweet" sensation of nougats and brings a vertiginous earthy depth.
