Red Lentils

These are red lentils whose outer envelope (the seed coat) has been removed and which have been split. Without this protective skin, the starchy matrix of the legume is directly exposed to heat and water. Gelatinization is lightning fast: in less than 15 minutes of boiling, its structure completely collapses. It is the natural plant binder par excellence, used in South Asia to obtain curries and dahls (purees) of incomparable thickness, creaminess, and sunny hue.
