Sunflower Oil
A highly refined oil, composed primarily of linoleic acid, sunflower oil offers absolute clarity and aromatic neutrality. Its extremely high smoke point (around 230°C) makes it the ideal thermodynamic vector for frying and very high-intensity Maillard reactions: it allows meats or vegetables to be browned and crusted without transferring off-flavors. Cold, it is the perfect base for whisking mayonnaises or making herb oils (parsley, basil) infused in a blender, without denaturing the herb's color or flavor.
