Hazelnut Oil
Obtained by mechanical pressing of previously roasted hazelnuts, this virgin oil is a pure concentrate of pyrazinic aromatic esters. Highly unsaturated in nature, it is extremely sensitive to heat, which would instantly destroy its delicate praline aroma. It is the finishing oil par excellence. A few drops placed raw on a boiling hot squash velouté, a scallop carpaccio, or goat cheese create an immediate olfactory explosion, the thermal transfer awakening its volatile perfumes without oxidizing them.
