Finger Lime

Nicknamed the "caviar of citrus", the finger lime (Microcitrus australasica) is a botanical treasure native to Australian forests. Beneath its rough bark hide thousands of tiny, spherical, crunchy vesicles that literally explode in the mouth under the mechanical action of the jaw. They release a bright, wildly tart, and complex juice, reminiscent of a cross between pink grapefruit and lime. It is the perfect technical ally for raw fish dishes (sashimi, tartare) because, unlike a classic juice, its encapsulated acidity does not "cook" or denature the delicate fish flesh prior to tasting.
